Although I am not a native North Carolinian, I love my home in Wilmington, NC. The people are great, the weather is pretty amicable (the term Carolina heat does apply to our summer months) and there is plenty to see and do around town.  As a personal chef I find my main highlight of coastal living is having access to local fresh fish and food markets. It’s why I love doing what I do. Shopping at local produce stands and hunting down the freshest fish around is what defines my food. Only the highest quality ingredients will do. Period, I have nothing more to say. Well, actually I do. It’s about that vacation you are planning. A vacation getaway should mean complete rest and relaxation.
